Topinambur with chives

Ingredients for four people

• 500 g Topinambur
• 1 little bunch chives
• 1/2 cloves
• 2 anchovies
• 1/2 glass white wine
• 1 glass stock
• 30 g butter
• parsley
• olive oil
• salt
• pepper

How to prepare it

Chop parsley, anchovies and garlic. Wither the chives in a little oil. Add Topinambur slices and cook on a high flame for a few minutes, drizzle with wine, leave it evaporate and add the stock. Add as much salt as you like. Cook on a low flame for 10 minutes. Put Topinamburs on a plate and sprinkle with butter flakes and the chopped parsley, anchovies and garlic.
