Sant’Ambrogio’s Topinambur

Ingredients for four people

• 150 g Topinambur
• 2 spoons grated parmigiano cheese
• 1 egg
• 50 g flour
• Olive oil
• salt
• pepper

How to prepare it

Peel and boil Topinamburs in a little water for 10 minutes and leave them to cool. Drain and blend them, separately whisk the egg with parmigiano cheese, flour, a bit salt, pepper, one spoon oil and Topinamburs. Pour the compound into four oiled shapes of aluminium and add flour. Bake in a bain-marie for 20 minutes. Serve tepid.
