Baked Topinambur

Ingredients for four people

• 800 g Topinambur
• 40 g butter
• 25 g flour
• 25 cl milk
• 1 yolk
• Grated parmigiano cheese
• breadcrumbs
• parsley
• Salt

How to prepare it

Boil Topinamburs in salt water for 20 minutes ca, then peel and cut them into circles. Grease a pan with butter, sprinkle with breadcrumbs and put the Topinamburs circles. Separately, prepare béchamel with 25 g butter, milk and flour. After having take it off the flame, add yolk and a bit parmigiano. Spread the sauce on Topinamburs and sprinkle breadcrumbs, chopped parsley and butter flakes. Put it all in the oven and au gratin.
