Butter Topinambur

Ingredients for four people

• 600 g Topinambur
• 60 g butter
• parsley
• salt

How to prepare it

Scratch, wash and cut the Topinamburs into segments. Bring them to boil in salt water and cook for 10 minutes ca. Drain and pour them into a saucepan with butter and salt, cover and cook on a low flame for 1 hour ca. If it is necessary, add some stock. Chop the parsley and add it 5 minutes before the cooking is ready. Mix and serve.
