Topinambur pie

Ingredients for four people

• 800 g Topinambur
• 50 g whole wheat
• 1/2 dl milk
• 1 bay leaf
• nutmeg
• 1 egg
• 1 dl di fresh cream
• 1 Clump parsley
• Salt
• pepper
• 150 g di Emmenthal cheese

How to prepare it

Cook the Topinambur in water for 45 minutes. In the meanwhile, pour the whole wheat into a pot on a high flame and leave it roast (do not burn it). Add milk and boil for a while. Add nutmeg and bay leaf; cook the sauce for 5 minutes. Take it off the flame and mix the other ingredients: yolk, cream, cheese and when the compound is cool add the egg white stiffs. Take Topinamburs, peel and cut them into thin slices and put them together with chopped parsley on an oven dish covered with baking paper. Sprinkle them all with the sauce and bake t 200°C for 25 minutes. Serve warm.
