Ricette con i topinambur


Topinambur sformatini

Ingredients for four people

• 500 g Topinambur
• 2 eggs
• 20 g grated parmigiano cheese
• 20 g flour
• 200 g semi-skimmed milk
• 2 cloves
• 2 fillets salt anchovy
• salt
• pepper

How to prepare it

Take the Topinamburs, so peel, cut them into thin slices and steam them for 20 minutes ca. Leave them to cool, and then mix with eggs, parmigiano, flour, a bit of salt and two spoons milk until you get a creamy and smooth compound. Then divide it into 4 smooth shapes covered with baking paper or aluminium. Put the shapes into a baking pan with 2 cm water and put it in the oven for 30 minutes ca. In the meanwhile take the cloves, so peel, cut them into small pieces and put them into a kettle with the milk left and cook on a low flame for 10 minutes. Rinse and bone the anchovies and mix them together with milk and boiled cloves until you get a smooth cream. Take the flans out of the mould, sprinkle with slightly cool sauce and serve with ground black pepper.
