Topinambur cream

Ingredients for four people

• 400 g Topinambur
• 75 cl meat stock
• 1 glass of cream
• 1 onion
• 1 clump parsley
• 2 spoons olive oil
• Salt

How to prepare it

Heat two spoons of oil and let the slices of onion wither. Add pieces of Topinamburs, pour the stock and bring it all to the boil. Cook on a low flame with cover for 30 minutes. Mix it all until you get a smooth cream. Adjust the salt. Add the glass of cream and heat if it is necessary. Pour the compound into a soup tureen, add chopped parsley, and then serve.
