Tagliatelle with Topinambur

Ingredients for four people

• 380 g pasta type fresh tagliatelle
• 150 g Topinambur
• 1 tomato
• garlic
• chopped parsley
• extra virgin olive oil

How to prepare it

Cook the Topinamburs in acidulous water, then cut them into small bits and pan-fry them with oil, garlic, and tomato cubes. Cook the tagliatelle in salt water and pan-fry them, maybe adding some water used to cook them, together with extra virgin olive oil. Then, garnish the dish with chopped parsley and serve.
