Topinambur and Onions Salad

Ingredients for four people

• 500 g Topinambur
• 100 g pitted green olives
• 1 red onion
• 8 spoons oil
• 1 thyme branch
• 1 marjoram branch
• 1 clump parsley
• 2 spoons apple vinegar
• 1 lemon
• salt
• pepper

How to prepare it

Take the onion and peel, wash, cut it into thin slices and put it into water, so it will become sweeter. Take the Topinamburs and peel, wash, dry, cut them into little circles and put them into a pan. Add cold water, lemon juice and salt, then cook on a high flame for 30 – 40 minutes or until they become tender. Take them with a skimmer and leave them to cool till room temperature. Cut the olives into little rings and put them into a salad bowl with Topinamburs, drained onions, oil, thyme, marjoram and parsley. Then dress with apple vinegar, salt and pepper.
