Topinambur Salad
Ingredients for four people
• 400 g Topinambur
• 4 artichoke hearts
• 1 lemon
• 1 carrot
• 4 spoons olive oil
• Salt
• Pepper
How to prepare it
Take the Topinamburs and peel, wash, dry and cut them into thin slices, then put them in a salad bowl.
Take the artichoke hearts, peel and slice them, then squirt lemon juice and add them to the Topinamburs. Add the julienne carrot. In another bowl emulsify four spoons olive oil, two spoons lemon juice, salt and pepper, then pour them into the salad bowl and mix them with the Topinamburs and artichoke hearts. Serve.
